Gorgeously spiraled cake rolls, often referred to as jelly rolls or roll cakes, are a stunning dessert that might seem tricky to make but are surprisingly simple with the right steps. Why are they called jelly rolls or cake rolls?
Historically, the term "jelly roll" was used because these cakes were traditionally baked in a "jelly roll pan." The term "jelly roll pan" is less commonly used now, as we typically use a 15x10x1-inch baking sheet or one with sides. The name "jelly roll cake" is therefore less frequently applied, but feel free to call it whatever you prefer. We're here to guide you through the process of making it.
Step 1: Prepare the Cake Roll Recipe
Prepare and bake the cake roll recipe as directed.
Cake roll recipe tips:
- Use a 15x10x1-inch pan only. Other pans may be too deep, making it difficult to remove the cake from the pan.
- Ensure the pan is greased and floured (or lined with waxed paper or parchment paper) as directed. This prevents the cake from sticking to the pan.
- Do not overbake. The cake is done when it springs back when lightly touched with your finger.
Step 2: Remove Cake from Pan onto Towel
Dust a clean, lint-free kitchen towel with powdered sugar. As soon as the cake comes out of the oven, immediately loosen the edges of the cake from the baking sheet with a flat knife.
Turn out the cake onto the prepared towel. The towel prevents the cake from sticking to itself when rolled, and the powdered sugar prevents it from sticking to the towel. A sticking cake can ruin your attempt at a cake roll.
Step 3: Roll Cake with Towel Inside and Cool
Starting with a short side of the cake, roll up the towel and the warm cake together into a spiral. This step helps to form the cake roll shape later without any cracking.
Place the cake roll on a wire rack and cool completely (about 1 hour). While the cake cools, prepare your filling or soften some ice cream if you're making an ice cream cake roll.
Step 4: Spread Filling on Cake Roll and Reroll
Unroll the cooled cake, leaving it on the towel. Spread the filling over the top of the cake, leaving 1 inch of the edges.
Reroll the cake, using the towel to lift and guide the cake into an even roll.
